Finally enjoying some nicer weather, and what better way to celebrate than with some tasty – and healthy – recipes! Just whipped up this easy “Summer Fresh Watermelon Feta Salad”, inspired by New York’s Soho district.

4 ingredients:

  • watermelon, chunks
  • light feta, crumbled
  • fresh mint, chopped fine
  • olive oil

Prepare all ingredients, using quantities to taste, and mix well.
